A quick and easy summer treat combining creamy Greek yogurt, fresh peaches, and crunchy honey granola for a refreshing and nourishing dessert.

  • 2 cups (475 ml) plain Greek yogurt (full-fat recommended)
  • 2 medium fresh peaches, ripe and sliced thinly
  • 2 tablespoons honey (preferably raw or local)
  • 1 teaspoon pure vanilla extract
  • 1 cup (100 grams) honey granola (homemade or store-bought)
  • 1 teaspoon lemon zest (optional)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Wash and dry the peaches thoroughly. Slice them thinly, about 1/8 inch (3 mm) thick, so they freeze evenly and stay tender once frozen. Set aside.
  2. In a medium mixing bowl, combine 2 cups (475 ml) of plain Greek yogurt with 2 tablespoons of honey and 1 teaspoon of vanilla extract. Stir until smooth and creamy. If adding lemon zest or chia seeds, fold them in now.
  3. Place a piece of parchment paper on a rimmed baking sheet, making sure it covers the entire surface with some overhang for easy removal later.
  4. Pour the yogurt mixture onto the parchment and spread it out evenly to about 1/4 inch (6 mm) thickness using a spatula.
  5. Arrange the peach slices decoratively on top of the yogurt layer, pressing them down gently so they stick a bit. Sprinkle the honey granola evenly over the peaches, giving it a light press.
  6. Place the baking sheet in the freezer, flat and undisturbed, for at least 4 hours or until completely firm. Overnight is best for texture.
  7. Once frozen solid, remove from the freezer. Using the parchment overhang, lift the bark off the baking sheet and break it into irregular pieces with your hands or a sharp knife. Serve immediately or store.

Notes

Use ripe peaches for natural sweetness and juiciness. Do not overmix yogurt to avoid runniness. Spread yogurt evenly for better freezing and texture. Press toppings gently to prevent falling off. Freeze at least 4 hours or overnight for best results. Use parchment paper, not wax paper, for easy removal. If yogurt looks watery before freezing, stir and spread quickly.
