A simple, no-cook breakfast made with rolled oats, peanut butter, and ripe bananas. This recipe requires only 5 minutes of prep time and results in a creamy, pudding-like texture that is perfect for meal prep.

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk (dairy, almond, oat, or soy)
  • 1 tablespoon chia seeds
  • 2 tablespoons natural peanut butter
  • 1 medium ripe banana
  • 1/2 teaspoon cinnamon
  • a pinch of salt
  • 1/2 banana for topping (optional)
  • extra peanut butter for drizzle (optional)

Instructions

  1. Mash the banana in a mixing bowl until it is mostly smooth with a few small lumps.
  2. Add the milk, peanut butter, chia seeds, cinnamon, and salt to the bowl. Stir vigorously until the peanut butter is fully dissolved and the mixture is a uniform beige paste.
  3. Add the rolled oats to the bowl and stir well to ensure every oat is coated in the liquid mixture.
  4. Divide the mixture evenly among mason jars or glass containers. Smooth the top with the back of a spoon.
  5. Cover with lids and refrigerate for at least 4 hours, preferably overnight.
  6. Stir well before serving to redistribute the milk and create a creamy texture. Top with sliced banana or extra peanut butter if desired.

Notes

Use ripe bananas with brown spots for natural sweetness and easier mashing. If the oats are too thick in the morning, add a splash of milk. If too runny, add a tablespoon of oats and let sit for 30 minutes. These oats keep well in the fridge for up to 5 days.
