These creamy peanut butter banana overnight oats are a quick, no-cook breakfast that’s ready in 5 minutes. Mashed banana and peanut butter create a naturally sweet, pudding-like texture that keeps you full until lunch.

  • 1/2 cup (45g) rolled oats
  • 1/2 cup (120ml) milk of choice
  • 1/4 cup (60g) plain Greek yogurt
  • 1 medium ripe banana
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For topping: sliced banana, drizzle of peanut butter, chopped peanuts or almonds, cinnamon, dark chocolate chips or cacao nibs (optional)

Instructions

  1. Mash the banana: Peel the ripe banana and drop it into the bottom of a mason jar. Use a fork to mash until mostly smooth with a few tiny lumps remaining.
  2. Add the peanut butter and wet ingredients: Spoon in the peanut butter, then pour in the milk, Greek yogurt, maple syrup (or honey), and vanilla extract. If peanut butter is cold, microwave the jar for 10-15 seconds to soften.
  3. Stir until smooth: Use a fork or small whisk to stir everything together until the peanut butter is fully incorporated and the mixture is uniform and slightly thick.
  4. Add the oats and chia seeds: Pour in the rolled oats and chia seeds. Stir until evenly distributed and oats are fully submerged. Add another tablespoon of milk if needed.
  5. Taste and adjust: Adjust sweetness or peanut butter flavor to your preference.
  6. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 4 hours, ideally 8-12 hours (overnight).
  7. Serve the next morning: Stir well. If too thick, add a splash of milk; if too thin, let sit longer or add more oats.
  8. Add toppings: Top with sliced banana, a drizzle of warm peanut butter, cinnamon, and other desired toppings.
  9. Enjoy cold or warm: Eat straight from the fridge or microwave for 45-60 seconds for warm oats.

Notes

For best texture, use rolled oats (not instant or steel-cut). Mash the banana thoroughly for even sweetness. Stir again in the morning for creaminess. Oats keep in the fridge for up to 5 days. Do not freeze.
