  • 2 tablespoons (30 ml) honey or maple syrup, adjust to taste
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 cup (60 g) almond flour (or oat flour for gluten-free)
  • 2 tablespoons (30 ml) melted coconut oil
  • Optional toppings: fresh berries, chopped nuts, or a drizzle of dark chocolate

Instructions

  1. Prepare the crust: In a medium bowl, combine 1/2 cup almond flour and 2 tablespoons melted coconut oil. Stir until the mixture holds together like wet sand. Press evenly into the bottom of mini muffin tin or silicone molds. Chill in the fridge for about 10 minutes.
  2. Blend the filling: In a food processor or blender, add 8 oz softened cream cheese, 1 cup drained small-curd cottage cheese, and 1/2 cup Greek yogurt. Blend until completely smooth, scraping down sides as needed (about 3-5 minutes).
  3. Add flavor and protein: To the smooth cheese mixture, add 1/4 cup vanilla protein powder, 2 tablespoons honey or maple syrup, 1 tablespoon fresh lemon juice, and 1 teaspoon vanilla extract. Pulse a few times until well combined but do not overblend (about 1-2 minutes).
  4. Fill the molds: Spoon or pipe the cheesecake filling over the chilled crust in molds, filling nearly to the top but leaving a small gap.
  5. Chill to set: Refrigerate the cheesecake bites for at least 2 hours or overnight for firmer texture.
  6. Add toppings and serve: Before serving, top with fresh berries, chopped nuts, or a drizzle of dark chocolate if desired. Serve chilled or let sit 10-15 minutes to soften slightly.

Notes

Let cream cheese soften at room temperature for at least 30 minutes before blending. Drain cottage cheese well to avoid watery filling. Pulse blending to avoid over-processing. Chill bites overnight for best firmness. Add a tablespoon of milk if filling is too thick. Use silicone molds for easy removal.
