Creamy Pumpkin Spice Overnight Oats Recipe with Caramel and Pecans

A cozy and creamy fall breakfast featuring rolled oats soaked overnight with pumpkin puree, warm spices, caramel drizzle, and toasted pecans for crunch. Easy to prepare and perfect for chilly mornings.

  • 1/2 cup (120g) pumpkin puree (canned or fresh)
  • 1 cup (240ml) milk (whole, almond, or oat milk)
  • 1/2 cup (120g) Greek yogurt (plain or vanilla)
  • 2 tablespoons (30ml) maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon (2g) pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • 1/2 teaspoon (1g) cinnamon
  • Pinch of salt
  • 1/4 cup (30g) chopped pecans, toasted
  • 2 tablespoons (30ml) caramel sauce (store-bought or homemade)

Instructions

  1. In a medium mixing bowl, combine 1 cup rolled oats, 1 teaspoon pumpkin pie spice, 1/2 teaspoon cinnamon, and a pinch of salt. Stir to distribute spices evenly.
  2. Add 1/2 cup pumpkin puree, 1 cup milk of choice, 1/2 cup Greek yogurt, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract. Stir well until combined.
  3. Divide the oat mixture into two 12-ounce (350ml) mason jars or airtight containers. Seal with lids.
  4. Refrigerate for at least 6 hours, preferably overnight, to allow oats to absorb liquid and soften.
  5. While oats soak, toast 1/4 cup chopped pecans in a dry skillet over medium heat for 3–5 minutes, stirring frequently until fragrant and lightly browned. Let cool.
  6. In the morning, stir the oats well. Drizzle 2 tablespoons caramel sauce over each jar and sprinkle toasted pecans on top.
  7. Enjoy immediately cold, or warm for about 30 seconds in the microwave if preferred.

Notes

Use rolled oats for best texture; quick oats get mushy. Toast pecans carefully to avoid burning. Adjust sweetness by varying maple syrup and caramel. For vegan version, use plant-based milk and yogurt, and replace caramel with date syrup. Store leftovers without caramel and pecans for up to 4 days; add toppings fresh before serving. If oats are too thick in the morning, stir in a splash of milk.
