A comforting and easy-to-make side dish featuring tender roasted delicata squash drizzled with a savory-sweet tahini and maple syrup sauce. This dairy-free, gluten-free recipe is perfect for fall gatherings or busy weeknights.

  • 2 medium delicata squash
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika (smoked or regular)
  • 1/4 cup tahini paste
  • 2 tablespoons pure maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • Water, as needed for sauce consistency
  • Optional garnishes: fresh parsley, pumpkin seeds, red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash the delicata squash thoroughly. Cut off both ends and slice in half lengthwise. Scoop out seeds and pulp.
  3. Slice squash halves into 1/2-inch thick half-moon shapes.
  4. In a large bowl, toss squash slices with olive oil, salt, pepper, cumin, and paprika until evenly coated.
  5. Line a large baking sheet with parchment paper. Arrange squash in a single layer, ensuring slices are not touching.
  6. Roast for 20-25 minutes, flipping halfway through, until tender and edges are crispy and golden.
  7. While squash roasts, whisk together tahini, maple syrup, lemon juice, and minced garlic in a small bowl.
  8. If the sauce is too thick, add water one tablespoon at a time until drizzle-able consistency is reached.
  9. Remove squash from oven and drizzle with warm tahini sauce. Garnish and serve immediately.

Notes

Do not crowd the pan to ensure roasting instead of steaming. Flip squash halfway for even browning. Use fresh garlic in the sauce rather than roasting it to prevent burning. If using butternut squash, peel it first as it has a tougher skin.
