A delicate, floral, and creamy panna cotta infused with rose water and topped with fresh berries. This easy homemade dessert is elegant yet simple, perfect for special occasions or spontaneous cravings.

  • 2 cups (480 ml) heavy cream
  • 1 cup (240 ml) whole milk
  • 1/3 cup (65 g) granulated sugar
  • 1 tablespoon (about 9 g) gelatin powder
  • 3 tablespoons (45 ml) cold water
  • 1 1/2 teaspoons rose water
  • 1 teaspoon vanilla extract
  • 1 cup fresh berries (strawberries, blueberries, raspberries)
  • Optional garnish: edible rose petals or mint leaves

Instructions

  1. Bloom the gelatin: Sprinkle gelatin over 3 tablespoons (45 ml) cold water in a small bowl. Let sit for 5 to 10 minutes until spongy.
  2. Heat cream and milk: In a medium saucepan, combine heavy cream, whole milk, and sugar. Warm over medium heat, stirring occasionally until sugar dissolves and mixture is hot but not boiling (around 170°F or 75°C).
  3. Add bloomed gelatin: Remove saucepan from heat. Add gelatin and whisk until completely dissolved and smooth.
  4. Flavor the cream: Stir in rose water and vanilla extract. Taste and adjust rose water if needed.
  5. Pour into molds: Divide mixture evenly into ramekins or dessert glasses. Let cool at room temperature for about 10 minutes.
  6. Chill: Refrigerate for at least 4 hours or until set with a gentle wobble. Freezing for 2 hours is possible but texture will be less silky.
  7. Serve: Top each panna cotta with fresh berries and optional edible rose petals or mint leaves just before serving.

Notes

Blooming the gelatin is essential for proper setting. Do not boil the cream mixture to avoid breaking down proteins. Add rose water gradually to avoid overpowering flavor. Chill for at least 4 hours for best texture. Fresh berries should be added just before serving to prevent bleeding and watery panna cotta. For unmolding, dip ramekins briefly in hot water and run a knife around edges.
