  • 2 boneless, skinless chicken breasts (fresh or frozen)
  • 1 can (15 oz) white beans (Great Northern or cannellini), including liquid
  • 1 package (16 oz) store-bought potato gnocchi
  • 4 cups low sodium chicken broth
  • 1 cup heavy cream or half-and-half
  • 3 garlic cloves, minced
  • 2 shallots, finely chopped
  • 1/4 cup chopped sun-dried tomatoes (optional but recommended)
  • 2 cups fresh baby spinach
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Parmesan cheese, grated, for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and chopped shallots; sauté until fragrant and translucent, about 2-3 minutes.
  2. Place chicken breasts at the bottom of the slow cooker. Add canned white beans with liquid, chicken broth, sautéed garlic and shallots, chopped sun-dried tomatoes, and Italian seasoning. Season with a pinch of salt and pepper, reserving some seasoning for later.
  3. Cover and cook on low for 4-5 hours until chicken is tender.
  4. Remove chicken breasts and shred with two forks. Return shredded chicken to the slow cooker and stir gently.
  5. Add gnocchi and heavy cream to the slow cooker. Stir carefully to combine. Cover and cook on high for 10-15 minutes until gnocchi are tender but not mushy.
  6. Stir in fresh baby spinach until wilted. Taste and adjust salt, pepper, or Italian seasoning as needed.
  7. Ladle soup into bowls and garnish with grated Parmesan cheese. Serve hot.

Notes

Sauté garlic and shallots before adding to the slow cooker to deepen flavor. Add gnocchi in the last 15 minutes to avoid mushiness. Adjust seasoning gradually. For dairy-free, substitute heavy cream with coconut or cashew cream and Parmesan with nutritional yeast. Freeze soup without gnocchi; add fresh gnocchi when reheating.
