  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice

Instructions

  1. If chicken breasts are large, cut them in half and place in the bottom of a 6-quart slow cooker. Season lightly with salt and pepper.
  2. Add diced onion and minced garlic on top of the chicken.
  3. Pour in chicken broth, diced green chiles (including juice), and rinsed cannellini beans. Gently mix to combine and ensure chicken is submerged.
  4. Sprinkle cumin, oregano, salt, and pepper over the top. Stir gently to distribute spices.
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken reaches 165°F and shreds easily.
  6. Remove chicken to a plate and shred into bite-sized pieces using two forks.
  7. Return shredded chicken to the pot. For thicker chili, use an immersion blender to blend about 1/3 of the mixture.
  8. Stir in heavy cream. This should be done at the end to prevent curdling.
  9. Let chili sit on ‘Warm’ for 15-20 minutes to meld flavors.
  10. Just before serving, stir in fresh cilantro and lime juice. Adjust seasoning with salt and pepper if needed.
