A rich, tangy, and moist cornbread dressing made with buttermilk for a creamy texture. This easy side dish comes together in under an hour and is perfect for holidays or weeknight dinners.

Ingredients

Scale
  • 1 large batch cornbread, baked, cooled, and crumbled
  • 2 cups buttermilk
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 medium yellow onion, finely diced
  • 2 stalks celery, finely diced
  • 1/4 cup fresh sage, chopped
  • 2 tablespoons fresh thyme leaves
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter (for sautéing)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Crumble the cooled cornbread into a large mixing bowl into small, pea-sized pieces.
  3. In a skillet, melt 2 tablespoons of butter over medium heat. Sauté diced onion and celery for 5-7 minutes until soft and translucent. Season with a pinch of salt and pepper.
  4. In a separate bowl, whisk together buttermilk, eggs, melted butter, chicken broth, salt, pepper, and fresh herbs.
  5. Pour the wet mixture over the crumbled cornbread and add the sautéed vegetables. Gently fold to combine, ensuring cornbread is evenly coated.
  6. Let the mixture sit for 10 minutes to allow the cornbread to absorb the liquid.
  7. Transfer the mixture to the prepared baking dish, spreading it evenly. Drizzle remaining melted butter over the top if desired.
  8. Bake for 35-40 minutes until the top is golden brown and the center is set.
  9. Let cool for 5-10 minutes before serving.

Notes

For best results, use fresh herbs and let the mixture rest for 10 minutes before baking to ensure moisture absorption. If the mixture looks too dry after resting, add a splash of buttermilk or broth. For a gluten-free version, use gluten-free cornbread mix. For a dairy-free version, substitute buttermilk with almond milk and vinegar, and use olive oil instead of butter.
