These spooky yet delicious Halloween brownies feature a fudgy chocolate base topped with marshmallow eyeballs made using simple kitchen shears and icing. They are quick to assemble, kid-friendly, and perfect for parties.

  • 1 box (approx. 18.25 oz / 517g) chocolate brownie mix
  • 3 large eggs, room temperature
  • 1/2 cup (115g) unsalted butter, melted
  • 1/3 cup (80ml) water or milk
  • 1 large bag (10 oz / 283g) large marshmallows
  • 1 tube black decorating icing
  • 1 tube white decorating icing
  • Red food coloring gel (optional, for bloodshot veins)
  • Sprinkles (black or orange, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper.
  2. In a large bowl, combine brownie mix, eggs, melted butter, and water/milk. Mix until just combined; do not overmix.
  3. Pour batter into the prepared pan and spread evenly.
  4. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  5. Let brownies cool completely in the pan on a wire rack.
  6. Once cool, lift brownies out and cut into 24 squares.
  7. Using kitchen shears, cut marshmallows in half horizontally, then cut each half in half again to create quarters.
  8. Place a marshmallow piece on each brownie square.
  9. Draw a white circle on the marshmallow with white icing, let set, then draw a black pupil in the center.
  10. Allow icing to dry for at least 10 minutes before serving.

Notes

Ensure brownies are completely cool before adding marshmallows to prevent melting. For gluten-free options, use a GF brownie mix and verify marshmallows/icing are GF. For dairy-free, use vegan brownie mix and marshmallows. Store in an airtight container at room temperature for up to 3 days.
