Crispy Bacon Cheddar Biscuits

Buttery, flaky biscuits loaded with crispy bacon and sharp cheddar cheese, perfect for breakfast, brunch, or a cozy dinner side.

  • 2 ½ cups (320 g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ cup (115 g) cold unsalted butter, cut into small cubes
  • 1 cup (110 g) sharp cheddar cheese, shredded
  • 6 slices cooked bacon, chopped
  • ¾ cup (180 ml) cold buttermilk
  • 1 teaspoon honey (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt until evenly combined.
  3. Add the cold, cubed butter to the dry mix. Using a pastry cutter or fingers, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized bits. Do not overwork.
  4. Stir in the shredded cheddar cheese and chopped cooked bacon.
  5. In a separate bowl, combine the cold buttermilk and honey (if using).
  6. Make a well in the center of the dry mixture and pour in the buttermilk. Gently fold with a fork or spatula until the dough just comes together; it will be slightly sticky. Do not knead or overmix.
  7. Lightly flour a clean surface and turn the dough out. Pat or roll into a rectangle about ¾-inch (2 cm) thick. Fold the dough into thirds like a letter, then pat down again to ¾-inch thickness to create flaky layers.
  8. Cut the dough into rounds or squares using a biscuit cutter or knife. Place on the prepared baking sheet about 1 inch (2.5 cm) apart.
  9. Bake for 15–18 minutes until golden brown and crispy on the edges. Biscuits should spring back lightly when pressed.
  10. Let the biscuits rest for 5 minutes before serving. Enjoy warm.

Notes

Keep butter cold to ensure flaky layers. Do not overmix dough to avoid tough biscuits. Folding dough creates flaky layers. If dough is too sticky, add flour tablespoon by tablespoon. Cook bacon extra crispy for crunchier bits. Biscuits can be frozen unbaked and baked from frozen with extra baking time.
