Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper and place a wire cooling rack on top if you have one. Spray the rack lightly with cooking spray.
  2. Prepare the cauliflower: Wash and dry the cauliflower thoroughly. Cut into uniform bite-sized florets—about 1 to 1.5 inches each. Pat them dry with a clean kitchen towel. Moisture is the enemy of crispiness, so get them as dry as possible.
  3. Make the batter: In a large bowl, whisk together the flour, milk, egg, garlic powder, smoked paprika, salt, and pepper until smooth. The batter should be thick enough to coat the back of a spoon but still runny. If it seems too thick, add a tablespoon more milk.
  4. Set up the breading station: Place the panko breadcrumbs in a shallow bowl or plate. Working in batches, dip each cauliflower floret into the batter, letting the excess drip off. Then roll it in the panko, pressing gently so the crumbs stick. Place each coated floret on the prepared baking sheet or rack. Leave a little space between each one for air circulation.
  5. Bake the cauliflower: Spray the tops of the florets generously with cooking spray. This is crucial for browning—do not skip it. Bake for 20 minutes, then flip each floret carefully with tongs. Spray again lightly and bake for another 10-15 minutes, until golden brown and crispy on the outside.

  7. Toss and serve: Once the cauliflower is out of the oven, transfer it to a large bowl. Pour the warm buffalo sauce over the top and toss gently until every floret is coated. Be careful not to break the crust. Serve immediately with ranch or blue cheese dressing, celery sticks, and a sprinkle of fresh parsley or green onions.
