These crispy baked chicken wing bites deliver a shatteringly crunchy skin without deep frying, thanks to a secret drying technique and two-temperature oven method. Paired with a fresh, herby homemade ranch dip, they are perfect for game days, parties, or any night you crave indulgent, juicy wings.

  • 2 pounds chicken wingettes or drumettes (about 2024 pieces)
  • 1 ½ teaspoons baking powder (NOT baking soda)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika (smoked or sweet)
  • Optional: ¼ teaspoon cayenne pepper
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • ¼ cup buttermilk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried dill weed
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat your oven to 250°F. Position the oven rack in the center.
  2. Line a large rimmed baking sheet with foil (optional) and place a wire cooling rack on top. Spray the rack lightly with nonstick cooking spray.
  3. Pat the chicken wings completely dry with paper towels, pressing firmly until no moisture remains.
  4. In a large bowl, whisk together the baking powder, salt, pepper, garlic powder, onion powder, paprika, and cayenne (if using) until no clumps remain.
  5. Add the dried wings to the bowl and toss thoroughly with your hands until every piece is evenly coated.
  6. Arrange the wings in a single layer on the wire rack, leaving a little space between each piece.
  7. Bake at 250°F for 30 minutes. Do not open the oven door during this time.
  8. After 30 minutes, remove the baking sheet from the oven. Increase the oven temperature to 425°F and let it come to temperature fully (about 10 minutes).
  9. Using tongs, flip each wing over.
  10. Return the baking sheet to the oven and bake at 425°F for 20-25 minutes, until the wings are deep golden brown and the skin is crackling-crisp.
  11. While the wings bake, make the ranch dip: In a small bowl, whisk together the sour cream, mayonnaise, buttermilk, lemon juice, dill, parsley, garlic powder, onion powder, salt, and pepper. Taste and adjust seasoning. Cover and refrigerate until ready to serve.
  12. Remove the wings from the oven and let them rest on the rack for 5 minutes.
  13. Transfer to a serving platter and serve immediately with the ranch dip alongside.

Notes

For extra heat, toss baked wings in buffalo sauce (melted butter + hot sauce) before serving, but note this will soften the skin. For the crispiest results, serve wings plain with dip on the side. If making a larger batch, work in batches to avoid overcrowding. Wings can be baked a few hours ahead and reheated in a 400°F oven for 5-7 minutes. Do not microwave.
