A cozy, seasonal cocktail featuring fresh Honeycrisp apples, honey, and apple cider topped with sparkling wine. This drink offers a perfect balance of sweet, tart, and fizzy flavors, perfect for fall gatherings or a relaxing weekend brunch.

  • 2 medium Honeycrisp apples, sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 23 lemon wedges
  • 1 cup (240 ml) apple cider
  • 2 tablespoons raw honey
  • 1 bottle (750 ml) dry sparkling wine or Prosecco
  • Thinly sliced apple rounds for garnish
  • 23 small sprigs fresh thyme (optional)

Instructions

  1. Mix the granulated sugar and ground cinnamon in a small shallow bowl.
  2. Rub a lemon wedge around the rim of each glass to wet it, then dip the rims into the cinnamon sugar mixture to coat. Set glasses aside.
  3. Wash the Honeycrisp apples and slice them into thin rounds. Do not peel.
  4. Take one apple slice and gently muddle it in the bottom of a mixing glass or large measuring cup until juicy and pulpy, but not completely mushy.
  5. Pour the apple cider over the muddled apple and add the honey. Stir vigorously with a bar spoon until the honey is completely dissolved.
  6. Optional: Chill the cider-honey mixture in the refrigerator for 10 minutes.
  7. Pour the chilled sparkling wine slowly down the side of the glass containing the cider mixture to preserve bubbles, filling to about 3/4 full.
  8. Garnish with fresh apple slices and a sprig of thyme. Give a gentle stir and serve immediately.

Notes

Ensure glasses are completely clean and free of soap residue to maintain carbonation. If the drink tastes too sweet, add a splash of lemon juice; if too tart, add more honey. For a non-alcoholic version, substitute sparkling wine with sparkling apple cider or water. Do not store the mixed drink in the fridge as it will go flat; store the cider-honey base separately for up to 2 days.
