  • 3 medium zucchini, grated (about 4 cups or 400 g)
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour (65 g) – or almond flour/gluten-free blend for gluten-free option
  • 2 large eggs, lightly beaten
  • 2 tablespoons fresh flat-leaf parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Zest of 1 lemon
  • 1/2 teaspoon garlic powder
  • Freshly ground black pepper, to taste
  • 3 tablespoons olive oil, for frying
  • For the Garlic Yogurt Dip:
  • 1 cup plain Greek yogurt (240 ml) – full-fat or dairy-free coconut yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Optional: fresh dill or parsley, finely chopped

Instructions

  1. Grate the zucchini using the coarse side of a box grater. Place grated zucchini in a bowl and sprinkle with 1 teaspoon salt. Let sit for 10 minutes to draw out moisture.
  2. Transfer zucchini to a clean kitchen towel or cheesecloth and squeeze firmly to remove most of the liquid.
  3. In a large bowl, combine squeezed zucchini with flour, beaten eggs, parsley, dill, garlic powder, lemon zest, black pepper, and a pinch of salt. Stir until well incorporated. Add more flour if batter is too wet.
  4. Heat olive oil in a non-stick or cast iron skillet over medium heat until shimmering but not smoking.
  5. Scoop about 2 tablespoons of batter per fritter into the hot oil. Flatten gently to form 3-inch rounds. Cook 3-4 minutes per side until golden brown and crisp. Adjust heat as needed.
  6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Keep warm in a low oven (about 200°F) while cooking remaining fritters.
  7. For the garlic yogurt dip, combine Greek yogurt, minced garlic, lemon juice, salt, and pepper in a small bowl. Stir in fresh herbs if using. Chill until serving.
  8. Serve fritters warm with a dollop of garlic yogurt dip on the side.

Notes

Squeeze zucchini well to avoid soggy fritters. Use medium heat to prevent burning or greasiness. Let fritters cook longer on first side if fragile. Do not overcrowd pan. For vegan version, replace eggs with flax eggs and use plant-based yogurt. Fritters can be baked or air fried as lighter alternatives.
