  • 4 large russet potatoes
  • 2 tbsp unsalted butter, melted
  • 1 tbsp extra virgin olive oil
  • 1 tsp coarse kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 6–8 strips thick-cut bacon
  • 2 cups sharp cheddar cheese, freshly grated
  • 2 green onions, thinly sliced
  • Sour cream, for serving
  • Chives, optional garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Wash and dry potatoes. Pierce each potato 5-6 times with a fork. Microwave on high for 5-7 minutes, flipping halfway, until soft but not mushy.
  3. Let potatoes cool for 5 minutes. Cut in half lengthwise and scoop out most of the inside, leaving a 1/4-inch layer attached to the skin. You should have 8 shells.
  4. In a small bowl, mix melted butter and olive oil. Brush the inside of each potato shell generously with the mixture. Sprinkle both sides with kosher salt and black pepper.
  5. Place shells cut-side up on the baking sheet. Bake for 15-20 minutes until edges are golden and firm.
  6. While potatoes bake, cook bacon in a skillet over medium heat until crisp (8-10 minutes). Drain on paper towels and crumble into small pieces.
  7. Reduce oven heat to Broil. Sprinkle shredded cheddar cheese over each potato shell, then crumble bacon pieces evenly over the cheese.
  8. Broil for 2-4 minutes, watching closely, until cheese is melted, bubbling, and browned, and potato edges are dark gold.
  9. Remove from oven immediately. Top with sliced green onions and a dollop of sour cream. Serve hot.

Notes

Do not skip the salt as it draws out moisture for crispiness. Ensure cheese is freshly grated to prevent clumping. Watch the broiler closely as it can burn quickly. Serve immediately as skins lose crunch within 15 minutes. Leftovers can be reheated in an air fryer or oven at 375°F.
