Crispy Maple Glazed Delicata Squash Rings (Easy Side Dish)

Crispy, golden delicata squash rings coated in a seasoned panko crust and finished with a sticky maple glaze. An easy, crowd-pleasing fall side dish that’s ready in about 30 minutes.

  • 1 medium delicata squash (about 1 pound)
  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 large egg
  • ⅓ cup milk (any kind)
  • ¼ cup plus 2 tablespoons pure maple syrup, divided
  • 1 cup panko breadcrumbs
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon fine sea salt, plus more for sprinkling
  • ¼ teaspoon freshly ground black pepper
  • Olive oil or avocado oil spray
  • Flaky sea salt for finishing (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top if available.
  2. Wash the delicata squash thoroughly. Trim off the ends, then slice crosswise into ½-inch thick rings. Scoop out seeds and stringy bits from the center of each ring.
  3. In a medium bowl, whisk together flour, cornstarch, egg, milk, 2 tablespoons maple syrup, ½ teaspoon salt, and black pepper until smooth. Batter should be thick but pourable.
  4. In a separate shallow bowl, combine panko breadcrumbs with smoked paprika and garlic powder. Stir to distribute spices.
  5. Working one at a time, dip each squash ring into the batter, letting excess drip off. Transfer to panko mixture and press gently on both sides to adhere. Place coated rings on prepared baking sheet.
  6. Lightly spray the tops of the rings with oil.
  7. Bake for 12 minutes. Flip rings using tongs, spray the other side with oil, and bake for another 10-12 minutes until deep golden brown and crispy.
  8. While rings bake, mix remaining ¼ cup maple syrup with a pinch of salt in a small bowl.
  9. Remove rings from oven and let cool on baking sheet for 2 minutes. Brush tops lightly with maple glaze. Sprinkle with flaky sea salt if desired. Serve immediately.

Notes

For extra crispiness, use a wire rack on the baking sheet. Don’t overcrowd the pan—rings need space to crisp. Apply maple glaze after baking to prevent burning. For air fryer: cook at 400°F (200°C) for 8-10 minutes, flipping halfway. Leftovers can be reheated in oven or air fryer; avoid microwave.
