  • 2 medium delicata squash, washed and sliced into 1/2-inch rings
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Optional toppings: fresh parsley, chopped pecans, or feta cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash the squash thoroughly. Slice off the top and bottom, cut in half crosswise, scoop out seeds, and slice into 1/2-inch rings.
  3. Place squash rings in a large mixing bowl. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
  4. Line a baking sheet with parchment paper. Arrange squash rings in a single layer, ensuring they do not overlap.
  5. Roast for 20 minutes until edges start to turn golden brown and centers are tender.
  6. Remove from oven and drizzle maple syrup over the hot squash. Toss gently to coat.
  7. Return to oven and roast for another 10-15 minutes, watching closely to prevent burning, until caramelized and crisp.
  8. Let rest for 5 minutes before serving.

Notes

Do not overcrowd the pan to ensure crispiness. Pat squash dry after washing to prevent steaming. If using a dark baking sheet, lower oven temperature by 25°F. The skin is edible and does not need to be peeled.
