Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
  4. Gradually add wet ingredients to dry ingredients and mix until just combined.
  5. Divide batter evenly among liners, filling them about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
  8. Beat softened butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla. Beat on high until fluffy.
  9. Pipe or spread frosting onto cooled cupcakes to create a ghost shape, letting it drip down the sides.
  10. Place edible eyes on the frosting while it is still soft.
