  • 1 cup (240g) plain cottage cheese
  • 2 large eggs, room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 1/3 cup (80ml) vegetable oil or melted unsalted butter
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 cup (90g) dark chocolate chunks (70% cacao)
  • 1/3 cup (60g) milk chocolate chunks
  • 1/4 cup (40g) white chocolate chunks
  • For the Espresso Streusel Topping:
  • 1/3 cup (40g) all-purpose flour
  • 1/4 cup (50g) brown sugar, packed
  • 2 tablespoons (15g) unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • 3 tablespoons (43g) unsalted butter, cold and cubed
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray and line with parchment paper.
  2. Prepare the espresso streusel topping: In a small bowl, combine 1/3 cup flour, 1/4 cup brown sugar, 2 tablespoons cocoa powder, 1 teaspoon instant espresso powder, and a pinch of salt. Add cold, cubed butter and pulse with a food processor or pastry cutter until coarse crumbs form. Chill in the fridge.
  3. In a large bowl, mash the ripe bananas until smooth. Add cottage cheese, eggs, granulated sugar, brown sugar, oil or melted butter, and vanilla extract. Mix until combined and creamy.
  4. In a separate medium bowl, sift together flour, baking soda, salt, and cocoa powder.
  5. Gradually fold the dry ingredients into the wet banana mixture until just combined. Avoid overmixing.
  6. Fold in the dark, milk, and white chocolate chunks evenly throughout the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the chilled espresso streusel evenly over the batter.
  8. Bake for 55-65 minutes, checking doneness at 50 minutes with a toothpick. It should come out with a few moist crumbs but no wet batter. Tent with foil if streusel browns too quickly.
  9. Cool the bread in the pan for 15 minutes, then lift out using parchment paper and transfer to a wire rack to cool completely.

Notes

Do not skip the baking soda to avoid a dense loaf. Keep the butter cold when making the streusel topping to ensure a crisp texture. Overmixing the batter can make the bread tough. Use chocolate chunks instead of chips for gooey pockets. Let the bread cool completely before slicing for clean cuts. Frozen bananas can be used if thawed and drained well.
