  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 250°F (120°C). Line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl (at least 6-quart), combine the Chex cereal and pecans. Toss gently to distribute evenly.
  3. In a small microwave-safe bowl or saucepan, melt the butter. Stir in the brown sugar, pumpkin pie spice, cinnamon, salt, and vanilla extract. Whisk until the sugar is mostly dissolved and the mixture resembles a thick paste.
  4. Pour the butter mixture over the cereal and nuts. Toss thoroughly with a large spoon or spatula until every piece is lightly coated.
  5. Spread the coated mix onto the prepared baking sheet in a thin, single layer.
  6. Bake for 10 minutes. Remove from oven and stir thoroughly to ensure even cooking.
  7. Return to oven and bake for another 10 minutes. Remove and stir again.
  8. Bake for a final 10 minutes. Remove from oven and stir one last time.
  9. Allow the mix to cool completely on the baking sheet or a wire rack. It will harden into a crunch as it cools.
  10. Break up any large clusters and store in an airtight container at room temperature.

Bake at a low temperature (250°F) to prevent burning the sugar. Stirring every 10 minutes is crucial for even coating and crunch. Ensure the mix cools completely before storing to maintain crispness. For a gluten-free version, use gluten-free Chex cereal and certified gluten-free spices.
