Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) and brown sugar. Sprinkle yeast over top, stir gently, and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Gradually add remaining 1 ½ cups flour, ½ cup at a time, until dough comes together and pulls away from the bowl.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. The dough should spring back when pressed.
  4. First rest: Shape dough into a ball, place in a lightly greased bowl, cover, and let rest for 20 minutes. It will puff slightly but not double.
  5. Shape the bites: Preheat oven to 425°F (220°C). Line a baking sheet with parchment. Divide dough into 4 equal portions. Roll each into a 1-inch thick rope, then cut into 1-inch pieces (about 20-24 per rope, 80-96 total).
  6. Prepare the baking soda bath: In a large pot, bring 8 cups of water to a boil. Carefully add ½ cup baking soda (it will foam), stir to dissolve, then reduce heat to a gentle simmer.

  10. Make the beer cheese dip: In a small saucepan, melt 1 tablespoon butter over medium heat. Whisk in 1 tablespoon flour and cook 1 minute. Slowly pour in beer, whisking constantly. Cook 2-3 minutes until thickened. Reduce heat to low, add softened cream cheese, whisk until smooth. Gradually add shredded cheddar, whisking until each addition melts. Stir in Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper. Keep warm over low heat.
