  • 2 cups Bisquick baking mix
  • 3 tablespoons granulated sugar (for biscuit topping)
  • 3/4 cup milk (whole or 2%)
  • 3 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large mixing bowl, combine sliced peaches, 3/4 cup granulated sugar, 1/4 cup brown sugar, ground cinnamon, fresh lemon juice, cornstarch, and a pinch of salt. Toss gently to coat evenly.
  3. Transfer the peach mixture into the greased baking dish, spreading it out evenly.
  4. In a separate bowl, whisk together 2 cups Bisquick baking mix and 3 tablespoons granulated sugar. Pour in 3/4 cup milk and 3 tablespoons melted unsalted butter.
  5. Stir the biscuit batter just until combined; it should be thick but spoonable. Adjust with a splash more milk or Bisquick if needed, but do not overmix.
  6. Drop spoonfuls of biscuit batter evenly over the peach filling, covering as much as possible.
  7. Bake in the preheated oven for 35-40 minutes until the topping is golden brown and peach juices are bubbly and thick.
  8. Cool for at least 10 minutes before serving to allow the filling to set.

Notes

Do not overmix the biscuit batter to keep biscuits fluffy. Use ripe but firm peaches to avoid mushy filling. If biscuit topping browns too quickly, tent with foil halfway through baking. For dairy-free, substitute milk with almond or oat milk and butter with coconut oil or plant-based alternative. Can use gluten-free baking mix for gluten-free version.
