A simple, comforting 4-ingredient dinner perfect for busy weeknights. This slow cooker meal features tender ground beef and fluffy white rice simmered in savory broth for a hassle-free, crowd-pleasing meal.

  • 1.5 pounds 80/20 ground beef
  • 1 cup uncooked white long-grain rice
  • 2 cups low-sodium beef broth
  • 1 medium yellow onion, finely diced
  • 3 cloves fresh garlic, minced
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup frozen corn kernels (optional)
  • Shredded cheddar or Monterey Jack cheese (optional)

Instructions

  1. Heat a large skillet over medium-high heat and brown the ground beef, breaking it up with a wooden spoon, until no pink remains (5-7 minutes). Drain excess fat if desired.
  2. Add the diced onion to the skillet with the beef and cook for 2 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Transfer the beef and onion mixture into a 6-quart slow cooker.
  4. Add the uncooked rice, beef broth, dried parsley, oregano, salt, and pepper to the slow cooker. Stir well to ensure rice is submerged.
  5. Cover and cook on LOW for 4 to 5 hours. (Alternatively, cook on HIGH for 2-3 hours, but monitor closely to prevent mushy rice).
  6. Once cooking is complete, turn off the slow cooker and let the dish sit covered for 10 minutes to allow the rice to finish absorbing liquid.
  7. Fluff the rice with a fork before serving. Stir in cheese or corn if using.

Notes

Do not use instant or brown rice as they require different liquid ratios and cooking times. For best flavor, brown the beef first rather than adding it raw. If the mixture is too dry after resting, add a splash of broth. Leftovers store well in the refrigerator for up to 4 days but do not freeze well due to rice texture.
