  • 56 medium fresh peaches, peeled and sliced
  • 1/2 cup (100g) granulated sugar
  • 1/3 cup (70g) brown sugar
  • 1 cup (90g) old-fashioned rolled oats
  • 1/3 cup (40g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons (85g) unsalted butter, cold and cubed
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice 5-6 medium peaches into roughly 1/2-inch slices. Toss them gently in a large bowl with 1/2 cup granulated sugar, 1 tablespoon lemon juice, 1 tablespoon cornstarch, and 1/2 teaspoon cinnamon. Set aside for 10 minutes to macerate.
  3. In a medium bowl, combine 1 cup rolled oats, 1/3 cup brown sugar, 1/3 cup flour, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Add 6 tablespoons cold, cubed unsalted butter.
  4. Use a pastry cutter or your fingers to work the butter into the dry ingredients until it resembles coarse crumbs with small pea-sized butter chunks.
  5. Pour the peach mixture into a 9×9-inch baking dish, spreading evenly. Sprinkle the oat topping evenly over the peaches.
  6. Bake for 35-40 minutes until the topping is golden brown and the peach filling is bubbling around the edges.
  7. Let the crisp cool slightly for 10-15 minutes before serving to allow the juices to set.

Notes

If topping browns too fast, cover loosely with foil halfway through baking. Add more cornstarch if peaches are very juicy to prevent sogginess. Butter should be cold for a crunchy topping. Peeling peaches improves texture. Can substitute almond flour for gluten-free and coconut oil for dairy-free versions. Frozen peaches can be used if thawed and drained.
