Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan generously with butter or nonstick spray, then line it with a strip of parchment paper that hangs over the long sides.
  2. Make the apple filling: In a small bowl, toss the diced apples with 2 tablespoons sugar, 1 teaspoon cinnamon, and 1 tablespoon melted butter. Set aside.
  3. Mix the cinnamon sugar swirl: In another small bowl, combine 1/3 cup sugar and 2 teaspoons cinnamon. Set aside.
  4. Cream the butter and sugar: In a large mixing bowl, beat the softened butter and 2/3 cup granulated sugar together until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl.

Top with the remaining apples and the rest of the cinnamon-sugar mixture. Dot the top with the 2 tablespoons of softened butter, cut into small pieces.
  9. Swirl it gently: Take a butter knife and gently swirl it through the batter in a figure-eight pattern, just a few times.
