Easy Honey Vanilla Peach Cobbler - featured image

A quick and easy peach cobbler featuring honey and vanilla-infused peaches topped with a crunchy brown sugar oat topping. Perfect for summer gatherings and comforting desserts.

Ingredients

Scale
  • 4 cups fresh peaches, peeled and sliced (about 5 medium peaches; frozen peaches work well too)
  • 2 tablespoons honey (raw local honey preferred)
  • 1 teaspoon vanilla extract (pure vanilla recommended)
  • 2 tablespoons granulated sugar (adjust based on peach sweetness)
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 cup rolled oats (not instant)
  • ½ cup all-purpose flour (can substitute almond flour for gluten-free)
  • ½ cup brown sugar, packed (dark brown sugar preferred)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter, melted and slightly cooled (or dairy-free butter/coconut oil for vegan)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine sliced peaches, honey, vanilla extract, granulated sugar, lemon juice, cinnamon, and cornstarch. Toss gently to coat evenly.
  3. Transfer the peach mixture to a 9×9-inch baking dish, spreading it out evenly in a single layer.
  4. In a separate bowl, mix rolled oats, flour, brown sugar, baking powder, and salt.
  5. Pour melted butter into the oat mixture and stir with a spatula until the mixture resembles wet sand and sticks together when pressed. Add more melted butter if too dry.
  6. Sprinkle the oat topping evenly over the peach layer without pressing down.
  7. Bake in the preheated oven for 35-40 minutes until the topping is golden brown and the peach filling bubbles around the edges.
  8. Remove from oven and let cool for at least 10 minutes before serving.

Notes

If topping browns too quickly, cover loosely with foil halfway through baking. Let melted butter cool slightly before mixing with oat topping. Use ripe but firm peaches for best texture. Let cobbler rest 10 minutes after baking to thicken filling. For vegan version, substitute butter with coconut oil and honey with maple syrup. Frozen peaches can be used after thawing and draining excess juice.
