  • 2 tablespoons extra virgin olive oil, to lightly brush the tomatoes
  • Pinch of sea salt
  • Freshly ground black pepper, to taste
  • About 20 wooden toothpicks or mini skewers

Instructions

  1. Rinse 1 pint (250 grams) of cherry tomatoes and pat dry. Remove any stems. Toss tomatoes gently in a bowl with 2 tablespoons extra virgin olive oil and a pinch of sea salt.
  2. Drain 8 ounces (225 grams) of mini mozzarella balls thoroughly on paper towels to remove excess moisture.
  3. Select about 20 fresh basil leaves, tearing larger leaves in half if needed.
  4. Assemble skewers by threading one cherry tomato, followed by a basil leaf (folded if large), then a mozzarella ball onto each wooden toothpick or mini skewer. Repeat until all ingredients are used.
  5. Arrange the skewers neatly on a serving platter, spacing them for easy drizzling.
  6. Drizzle about 3 tablespoons of balsamic glaze evenly over the skewers using a spoon or squeeze bottle.
  7. Sprinkle freshly ground black pepper over the top for a subtle spice kick.
