  • 4 bone-in pork chops, about 1-inch thick
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon unsalted butter
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Take pork chops out of fridge 15-20 minutes before cooking. Pat dry with paper towels. Season both sides with salt, pepper, and garlic powder.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, and apple cider vinegar. Set aside. If using cornstarch slurry, mix in a separate tiny bowl.
  3. Heat a large skillet over medium-high heat. Add olive oil and swirl to coat. When oil is shimmering, lay pork chops in pan without crowding. Sear undisturbed for 4-5 minutes until deep golden-brown. Flip and cook another 3-4 minutes. Internal temperature should be around 135°F (57°C). Transfer chops to a plate and tent loosely with foil.
  4. Reduce heat to medium-low. Pour honey garlic mixture into the pan, scraping up browned bits. Let simmer 2-3 minutes until slightly thickened. If using cornstarch slurry, stir it in and cook 1 more minute until glossy.
  5. Add butter to sauce and stir until melted. Taste and adjust: add more vinegar if too sweet, or a squeeze of honey if too salty.
  6. Return pork chops to skillet, spooning sauce over them. Cook 2-3 minutes, flipping once, until internal temperature reaches 145°F (63°C).
  7. Remove skillet from heat. Let pork chops rest in sauce 5 minutes before serving. Sprinkle with parsley and spoon extra sauce over top.

Notes

Pat pork chops dry for best sear. Watch heat when adding sauce to prevent burning honey. Use a meat thermometer to avoid overcooking. Let rest 5 minutes before serving.
