Easy One Pot Ground Turkey Taco Soup Recipe

A quick and hearty one-pot taco soup made with lean ground turkey, beans, corn, and fire-roasted tomatoes. Ready in under 30 minutes, this crowd-pleasing meal is perfect for busy weeknights and packed with flavor.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning (reduced-sodium preferred)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika (optional)
  • 1 can (14.5 ounces) fire-roasted diced tomatoes, undrained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) whole kernel corn, drained
  • 4 cups low-sodium chicken broth
  • 1 can (4 ounces) diced green chiles (mild or medium)
  • Shredded cheddar cheese (for topping, optional)
  • Sour cream or Greek yogurt (for topping, optional)
  • Fresh cilantro, chopped (for topping, optional)
  • Diced avocado (for topping, optional)
  • Crumbled tortilla chips or crushed corn chips (for topping, optional)

Instructions

  1. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  2. Add the ground turkey and break it apart with a wooden spoon. Cook for 5 to 7 minutes, stirring occasionally, until no longer pink and browned bits form.
  3. Add the diced onion and cook for 3 to 4 minutes until softened and translucent, scraping the bottom of the pot to incorporate browned bits.
  4. Stir in the minced garlic, taco seasoning, cumin, and smoked paprika. Cook for 1 minute until fragrant.
  5. Pour in the fire-roasted tomatoes (with juices) and stir. Let it bubble for 2 minutes, scraping up any browned bits from the bottom.
  6. Add the drained black beans, kidney beans, corn, and diced green chiles. Stir to combine.
  7. Pour in the chicken broth and stir well. Bring to a boil, then reduce heat to medium-low and simmer uncovered for 15 minutes, until slightly thickened.
  8. Taste and adjust seasoning with salt, pepper, or lime juice as needed.
  9. Remove from heat and let rest for 5 minutes before serving. Serve hot with desired toppings.

Notes

Fire-roasted tomatoes add a subtle charred flavor; regular diced tomatoes plus a pinch of smoked paprika can substitute. For a thicker soup, mash half the black beans before adding. This soup tastes even better the next day. To reduce sodium, use no-salt-added canned goods and reduced-sodium taco seasoning.
