Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, toss the sliced peaches with 1/4 cup of sugar and the cinnamon. Set aside to macerate while you make the batter.
  3. In another bowl, whisk together 1 cup flour, 1/2 cup sugar, baking powder, and salt until combined.
  4. Stir in the milk, melted butter, and vanilla extract gently until smooth but do not overmix; a few small lumps are fine.
