These easy turkey and cheese pinwheel roll-ups are a quick, no-cook lunchbox solution that stays fresh and fun. Ready in 10 minutes with simple ingredients, they’re perfect for school lunches, picnics, or snacks.

  • 8 ounces cream cheese, softened to room temperature
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Pinch of salt
  • 4 large flour tortillas (burrito-sized, about 10 inches)
  • 812 slices deli turkey breast (about 1/2 pound)
  • 8 slices provolone cheese
  • 1/2 cup shredded lettuce (optional)
  • 1/4 cup thinly sliced red bell pepper (optional)

Instructions

  1. In a small bowl, combine softened cream cheese, mayonnaise, Dijon mustard, garlic powder, onion powder, black pepper, and salt. Stir until completely smooth and well combined. Taste and adjust seasoning if needed.
  2. Lay one tortilla flat on a cutting board. If tortillas are stiff, microwave for 10 seconds to make more pliable.
  3. Using a rubber spatula, spread about 2-3 tablespoons of the cream cheese mixture evenly over the entire surface of the tortilla, going all the way to the edges.
  4. Place 2-3 slices of turkey flat on the cream cheese, overlapping slightly to cover the surface. Top with 2 slices of provolone cheese, tearing if needed to fit. If using, sprinkle lettuce and bell pepper evenly over the cheese.
  5. Starting at one edge, tightly roll the tortilla into a log, using fingers to keep filling tucked in. Roll as tightly as possible without tearing. Place seam-side down and gently squeeze along the length to ensure even tightness.
  6. Wrap each rolled tortilla tightly in plastic wrap or wax paper, twisting the ends like a candy wrapper. Refrigerate for at least 30 minutes, or up to 24 hours.
  7. Unwrap chilled rolls and place on a cutting board. Using a sharp knife, slice each roll into 1-inch thick pinwheels using a gentle sawing motion. Arrange in lunch containers. If needed, secure each pinwheel with a toothpick.

Notes

Cream cheese must be properly softened to avoid tearing tortillas. Chilling is essential for clean slicing. Pat vegetables dry to prevent sogginess. Make extra cream cheese spread for future use. For gluten-free, use gluten-free tortillas or lettuce wraps (assemble at lunchtime). For low-carb, use low-carb tortillas.
