Instructions

  1. Place 1 cup unsalted butter in a medium saucepan over medium heat. Stir constantly as it melts, foams, and turns golden brown with a nutty aroma. Remove from heat once browned specks appear and pour into a heatproof bowl. Let cool for 10 minutes.
  2. Whisk in 3/4 cup light brown sugar and 1/4 cup granulated sugar into the warm browned butter until combined.
  3. Beat in 1 large room temperature egg and 1 teaspoon pure vanilla extract until smooth and glossy.
  4. In a separate bowl, whisk together 1 3/4 cups all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently with a wooden spoon or spatula. Do not overmix; dough should be thick but soft.
  6. Fold in 1/2 cup toffee bits and 1 cup semisweet chocolate chips evenly through the dough.
  7. Optional: Cover dough and chill in the fridge for 30-60 minutes for thicker cookies and better flavor.
  8. Preheat oven to 350°F (175°C). Drop dough by rounded tablespoons onto a parchment-lined baking sheet, spacing about 2 inches apart. Lightly sprinkle each cookie with flaky sea salt (~1/4 teaspoon each).
