Flavorful Peach Sorbet Popsicles Recipe with Tajin Lime Chamoy Drizzle

A refreshing and bold summer treat combining creamy peach sorbet popsicles with a tangy, spicy Tajin lime and chamoy drizzle. Perfect for cooling down on hot days with a sweet, tart, and spicy flavor combo.

  • 4 cups ripe peaches, peeled and chopped (about 56 medium peaches)
  • 1/2 cup granulated sugar (adjust to taste; organic cane sugar recommended)
  • 1/4 cup fresh lime juice
  • 1/2 cup water
  • 1 tsp vanilla extract (optional)
  • 2 tbsp Tajin seasoning
  • 3 tbsp chamoy sauce
  • 1 tbsp fresh lime juice (for drizzle)

Instructions

  1. Peel and chop the peaches into chunks. Optionally blanch in boiling water for 30 seconds, then plunge into ice water and peel for easier skin removal. (10 minutes)
  2. Make simple syrup by combining sugar and water in a small saucepan over medium heat. Stir until sugar dissolves completely. Let cool. (5-7 minutes)
  3. In a blender, add peaches, simple syrup, lime juice, and vanilla extract. Blend on high until smooth. For extra smooth texture, strain through a fine mesh sieve. (3-5 minutes)
  4. Pour the peach mixture into popsicle molds, leaving space at the top for expansion. Insert sticks and place in the freezer. (5 minutes)
  5. Prepare the drizzle by mixing chamoy sauce, Tajin seasoning, and lime juice in a small bowl. Adjust to taste. (2 minutes)
  6. Freeze popsicles for at least 4-6 hours or overnight until solid.
  7. To serve, remove popsicles from molds by running warm water over the outside briefly. Drizzle each popsicle generously with the Tajin lime and chamoy sauce. (2 minutes)

Notes

Use ripe but firm peaches for best texture. Simple syrup prevents iciness. Drizzle just before serving to keep flavors fresh. For creamier texture, add 1/3 cup coconut milk before freezing. Frozen peaches can be used if thawed slightly. Substitute lime juice with lemon juice if needed. Drizzle can be frozen separately and brushed on frozen popsicles. Blend sorbet again after 2 hours of freezing if texture is icy.
