  • 1 1/4 cups (300ml) buttermilk (or milk with 1 teaspoon vinegar, let sit 5 minutes)
  • 1 large egg, room temperature
  • 3 tablespoons vegetable oil (neutral oil like canola)
  • 2 teaspoons red food coloring (gel-based preferred)
  • 1 teaspoon white vinegar
  • For the cream cheese drizzle:
  • 4 ounces (115g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 2 to 3 tablespoons milk (whole milk or substitute)
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, sugar, and salt.
  2. In another bowl, whisk together the buttermilk, egg, vegetable oil, red food coloring, and white vinegar until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold until just combined. A few small lumps are okay. If batter is too thick, add a splash more buttermilk.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Test heat by sprinkling a few drops of water; if they dance and evaporate quickly, pan is ready.
  5. Pour about 1/4 cup batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook the other side for 1-2 minutes until golden and cooked through. Avoid pressing down on pancakes.
  6. While pancakes cook, beat the softened cream cheese with powdered sugar, 2 tablespoons milk, and vanilla extract until smooth and pourable. Add more milk if needed.
  7. Stack pancakes on plates and spoon the cream cheese drizzle generously over the top. Serve warm.
