A seasonal fruit salad celebrating autumn’s sweetest gifts with a balance of tart and sweet flavors, dressed in a light lemon-honey mixture.

Ingredients

  • Apples (mix of Honeycrisp and Granny Smith)
  • Pears (Bosc or Anjou)
  • Fresh figs (Black Mission or Brown Turkey)
  • Fuyu persimmons
  • Pomegranate arils
  • Fresh cranberries
  • 1 medium lemon (juice and zest)
  • Raw honey
  • Ground cinnamon
  • Fresh mint leaves
  • Pinch of salt

Instructions

  1. Wash all fruits thoroughly under cold water and pat dry.
  2. Peel apples and pears if desired, then cut into bite-sized chunks. Place in a large bowl and drizzle with some lemon juice to prevent browning; toss gently.
  3. Slice figs into quarters or halves and add to the bowl.
  4. Peel persimmons if the skin is tough, cut into cubes, and add to the mix.
  5. Prepare pomegranate arils by submerging the fruit in water and separating the seeds; drain and add to the salad.
  6. Add fresh cranberries to the bowl; lightly crush them if desired to release juices.
  7. In a small bowl, whisk together honey, remaining lemon juice, a pinch of salt, and cinnamon until smooth.
  8. Pour the dressing over the fruit and toss gently with a large spatula or spoons to coat without breaking the fruit.
  9. Tear fresh mint leaves and toss them in last.
  10. Let the salad sit for 10 minutes before serving to allow flavors to meld.
  11. Transfer to a serving bowl and serve immediately.

Notes

Prevent browning by tossing cut apples and pears with lemon juice immediately. For best texture, add delicate fruits like figs and persimmons just before serving. Store leftovers in an airtight container in the refrigerator for 2-3 days. Do not use frozen fruit as it becomes mushy.
