A quick and easy fresh berry protein parfait with red, white, and blue layers, combining fresh strawberries, blueberries, Greek yogurt, and vanilla protein powder for a nutritious and festive breakfast.

  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 ½ cups plain Greek yogurt (full-fat or low-fat)
  • 1 scoop vanilla protein powder
  • 12 teaspoons honey or maple syrup (optional)
  • ½ cup granola (optional)
  • A few sprigs fresh mint leaves (optional)

Instructions

  1. Rinse the strawberries and blueberries under cold water. Hull and slice the strawberries into thin pieces. Set aside.
  2. In a medium bowl, combine the Greek yogurt and vanilla protein powder. Stir with a whisk or fork until smooth and creamy, ensuring no lumps. Taste and add honey or maple syrup if desired.
  3. Start by spooning the sliced strawberries evenly into the bottom of your glass or jar to create the red layer.
  4. Add half of the protein yogurt mixture, smoothing it gently with the back of a spoon.
  5. Add a layer of blueberries for the blue layer.
  6. Top with the remaining yogurt to create the white layer.
  7. Sprinkle granola on top for texture. Add fresh mint leaves for garnish if desired.
  8. Serve immediately or refrigerate for up to 2 hours to chill. Add granola just before serving to keep it crunchy.

If protein yogurt is too thick, add a splash of milk or plant-based milk to loosen it for easier layering. Add granola just before serving to keep it crunchy. Frozen berries should be thawed and drained before use to avoid watery parfait. Can substitute Greek yogurt with dairy-free yogurt and use plant-based protein powder for a vegan option.
