  • 8 ounces fresh burrata cheese
  • 1 cup packed fresh basil leaves, washed and patted dry
  • ½ cup extra-virgin olive oil (for basil oil)
  • 1 cup cherry tomatoes, halved (optional)
  • Sea salt to taste (Maldon flakes recommended)
  • Freshly cracked black pepper to taste
  • 1 tablespoon fresh lemon juice
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Make the basil oil: Place fresh basil leaves and olive oil in a blender. Blend on high until smooth and bright green, about 30 seconds. Pour through a fine-mesh sieve to remove solids if desired. Set aside.
  2. Prepare the peaches: Rinse and dry peaches. Slice into ½-inch thick wedges, removing the pit. Aim for uniform slices.
  3. Slice the cherry tomatoes (optional): Halve the tomatoes and set aside.
  4. Arrange the salad: On a large platter, alternate slices of peach and dollops of burrata cheese. Scatter tomatoes evenly over the top if using.
  5. Season: Drizzle lemon juice over the salad, then sprinkle with sea salt and freshly cracked black pepper to taste.
  6. Add basil oil: Spoon or drizzle the basil oil generously over the entire salad.
  7. Optional finishing touch: Drizzle with balsamic glaze if desired.
  8. Chill: Let the salad rest in the refrigerator for 15 minutes before serving to meld flavors and keep cool.
