  • ½ cup fresh cilantro, chopped
  • Juice of 1 large lime (about 2 tablespoons), freshly squeezed
  • 2 cloves garlic, minced
  • ½ cup onion, finely chopped (white or yellow)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 1 tablespoon olive oil
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 8 small corn or flour tortillas (6-inch), warmed before serving
  • Optional toppings: diced avocado, shredded lettuce, diced tomatoes, crumbled queso fresco, sour cream, or salsa

Instructions

  1. Finely chop ½ cup onion and mince 2 cloves of garlic. Chop ½ cup fresh cilantro and squeeze juice from 1 large lime into a small bowl. Set aside.
  2. Place your skillet over medium-high heat and add 1 tablespoon olive oil. Let it heat for about 1 minute until shimmering but not smoking.
  3. Add the chopped onion to the skillet and sauté for 3-4 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Crumble the turkey into the skillet. Cook for 6-8 minutes, stirring and breaking up the meat with your spoon, until it’s no longer pink and starts to brown slightly.
  5. Sprinkle in 1 teaspoon ground cumin, 1 teaspoon chili powder, ½ teaspoon smoked paprika, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir well to coat the turkey evenly with the spices. Cook for another 2 minutes to let the flavors meld.
  6. Remove the skillet from heat. Stir in the chopped cilantro and lime juice mixture immediately to keep the herbs bright and fresh.
  7. While the meat rests, warm your tortillas until soft and pliable by heating on a skillet for 20 seconds per side or microwaving wrapped in a damp towel for 30 seconds.
  8. Spoon the zesty turkey mixture evenly onto each tortilla. Add optional toppings like diced avocado or shredded lettuce if desired.
  9. Serve immediately and enjoy warm.
