  • 1 avocado, diced (ripe but firm)
  • 1 ripe mango, diced (preferably Ataulfo)
  • 1/2 ripe avocado (for vinaigrette)
  • 1/2 ripe mango, peeled and chopped (for vinaigrette)
  • Juice of 2 limes (about 3 tablespoons)
  • 1 tablespoon honey or agave syrup
  • 1/4 cup olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the rinsed black beans, corn kernels, cherry tomatoes, diced red bell pepper, and finely chopped red onion. Gently toss to mix. (About 5 minutes)
  2. In a blender or food processor, add 1/2 avocado, 1/2 mango, lime juice, honey, olive oil, minced garlic, cumin, salt, and pepper. Blend until smooth and creamy. Scrape down the sides if needed. (About 3-4 minutes)
  3. Pour the vinaigrette over the bean and veggie mix. Toss gently to coat all ingredients without mashing the avocado or mango. (2 minutes)
  4. Fold in the diced avocado and mango chunks last for texture contrast. Add chopped cilantro and give a final gentle stir. (2 minutes)
  5. Let the cowboy caviar sit for 10-15 minutes at room temperature to allow flavors to meld. Taste and adjust seasoning if necessary. (Optional but recommended)
  6. Transfer to a serving bowl and pair with tortilla chips or as a topping for grilled meats or tacos.

Notes

Use ripe but firm avocados to avoid mushy texture. Rinse canned beans well to reduce sodium and canned flavor. Use fresh lime juice for best flavor. Start with less vinaigrette and add more as needed to avoid overdressing. Let flavors meld by resting 10-15 minutes. For a dairy-free version, swap honey for agave syrup. If vinaigrette is too thick, add a teaspoon of water to loosen it. Can substitute mango with peaches, nectarines, or pineapple for variations.
