A simple, wholesome frozen snack combining creamy Greek yogurt, fresh berries, honey, and crunchy pistachios. Perfect for a refreshing midday snack or light dessert.

  • 2 cups (475 ml) Greek yogurt (full-fat or 2%)
  • 1 cup (150 grams) mixed berries (blueberries, raspberries, sliced strawberries)
  • 2 tablespoons (30 ml) honey (raw or wildflower)
  • 1/4 cup (30 grams) pistachios, shelled and roughly chopped
  • 1 teaspoon (5 ml) vanilla extract (optional)
  • Optional add-ins: pinch of cinnamon or lemon zest

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper.
  2. In a medium mixing bowl, combine Greek yogurt and vanilla extract if using. Stir gently until smooth.
  3. Pour the yogurt mixture onto the prepared baking sheet and spread evenly to about 1/4-inch (6 mm) thickness.
  4. Scatter mixed berries evenly over the yogurt, pressing some down gently.
  5. Drizzle honey over the berries and yogurt.
  6. Sprinkle chopped pistachios evenly on top.
  7. Place the tray flat in the freezer and freeze for at least 3 hours or preferably overnight until firm.
  8. Once frozen, lift the parchment paper and break the bark into rustic pieces.
  9. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

Pat berries dry if very juicy to prevent soggy bark. Use full-fat or 2% Greek yogurt for best creamy texture. Drizzle honey on top rather than mixing in to keep a glossy finish. Freeze flat and level for even texture. Let bark sit at room temperature for 2-3 minutes if too hard to break or bite.
