Ingredients

Scale
  • 1 lb (450 g) ground turkey (preferably lean but not too dry)
  • 1/4 cup (25 g) finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup (15 g) fresh parsley or cilantro, chopped
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 ripe avocado, peeled and pitted
  • 1 tbsp Greek yogurt or sour cream (optional)
  • Juice of half a lime
  • 1 small garlic clove, minced
  • Salt and pepper, to taste
  • 4 whole wheat or brioche burger buns, toasted
  • Fresh lettuce leaves or baby spinach
  • Tomato slices (optional)
  • Red onion slices

Instructions

  1. In a large bowl, combine ground turkey, finely chopped onion, minced garlic, chopped parsley or cilantro, smoked paprika, ground cumin, salt, and pepper. Drizzle in olive oil and mix gently until just combined.
  2. Divide the mixture into 4 equal portions and shape each into a roughly 4-inch diameter patty about 3/4 inch thick. Make a slight indentation in the center with your thumb.
  3. Preheat grill or grill pan over medium-high heat until hot. Lightly oil the grill grates if using a grill.
  4. Place patties on the grill and cook for about 5-6 minutes per side, flipping once, until internal temperature reaches 165°F (74°C). Avoid pressing down on patties.
  5. While patties cook, mash the avocado in a small bowl with a fork. Stir in Greek yogurt (if using), lime juice, minced garlic, salt, and pepper to taste.
  6. Lightly toast burger buns on the grill or in a toaster.
  7. Assemble burgers by spreading a generous layer of creamy avocado on each patty. Add lettuce, tomato slices, and red onion as desired. Close with the top bun and serve immediately.
  8. Let patties rest for a couple of minutes after grilling to redistribute juices.

Notes

Do not overmix the turkey to avoid tough patties. Make a slight indentation in the center of each patty to prevent puffing. Use a thermometer to ensure patties reach 165°F. Let patties rest after cooking. Wet hands before shaping patties if mixture is sticky.
