Fresh Healthy Peach Vinaigrette Recipe with Honey Dijon

A bright and fresh peach vinaigrette with honey Dijon mustard that adds a sweet and tangy flavor to salads. Easy to make and perfect for summer.

Ingredients

  • 2 medium ripe peaches, peeled and pitted
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 3 tablespoons apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Peel and pit the peaches by scoring an ‘X’ at the bottom, plunging them into boiling water for 30 seconds, then into ice water to loosen the skin. Peel with fingers or a paring knife, cut in half, and remove the pit (about 5 minutes).
  2. Add the peeled and pitted peaches to a blender or food processor. Pulse until smooth but keep some texture if desired (1-2 minutes).
  3. Add honey, Dijon mustard, apple cider vinegar, olive oil, salt, pepper, and optional lemon juice to the blender. Blend until fully combined and creamy (about 30 seconds).
  4. Taste and adjust seasoning: add more vinegar if too sweet, or more honey/olive oil if too tangy.
  5. Pour the dressing into a jar or container, seal tightly, and refrigerate for at least 30 minutes to let flavors marry. Shake or stir before serving.

Notes

If peaches are not very sweet, add a pinch of cinnamon for warm undertones. Shake or whisk before serving as natural separation occurs. For a creamier dressing, stir in a tablespoon of Greek yogurt. Can be made vegan by substituting honey with maple syrup or agave nectar. Dressing keeps up to 5 days refrigerated in an airtight container.
