A quick and easy homemade peach simple syrup made from fresh peaches, perfect for sweetening summer drinks like iced tea, cocktails, and sparkling water.

  • 3 medium ripe peaches, peeled and chopped
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tablespoon freshly squeezed lemon juice
  • Optional: 1 split vanilla bean or 1 teaspoon vanilla extract
  • Optional: 1 cinnamon stick

Instructions

  1. Peel and chop the peaches into roughly 1-inch pieces. Blanching in boiling water for 30 seconds can help loosen the skin.
  2. Combine chopped peaches, sugar, and water in a medium saucepan. Add vanilla bean or cinnamon stick if using. Stir gently to combine.
  3. Place saucepan over medium heat and bring to a gentle simmer. Stir occasionally to dissolve sugar. Simmer uncovered for 10-12 minutes until peaches are soft and syrup thickens slightly.
  4. Remove from heat and stir in lemon juice.
  5. Strain the mixture through a fine mesh strainer or cheesecloth into a bowl or pitcher, pressing gently to extract liquid.
  6. Let syrup cool to room temperature, then transfer to a mason jar or airtight container and refrigerate.

Notes

Avoid boiling vigorously to prevent bitterness and burning sugar. Stir frequently. If syrup thickens too much after cooling, stir in a little water to loosen. Store refrigerated up to two weeks or freeze in ice cube trays for longer storage.
