  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth (low sodium preferred)
  • 1 can (15 oz) white beans, drained and rinsed (cannellini or great northern beans)
  • 3/4 cup orzo pasta (130 g)
  • 4 cups fresh spinach, roughly chopped (about 120 g)
  • 1 large lemon, juiced and zested
  • Salt and freshly cracked black pepper, to taste
  • A handful fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat the olive oil over medium heat in a large soup pot. Once shimmering (about 2 minutes), add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until softened and slightly golden.
  2. Add minced garlic and stir for 1 minute until fragrant, being careful not to burn it.
  3. Pour in the vegetable broth and bring to a gentle boil, scraping the bottom of the pot to loosen any browned bits.
  4. Add the orzo pasta and stir. Reduce heat to medium-low and simmer uncovered for 8-10 minutes, stirring occasionally to prevent sticking, until orzo is tender but still slightly firm.
  5. Stir in the drained white beans and chopped spinach. Cook for another 2-3 minutes until the spinach wilts and beans are heated through.
  6. Remove from heat and immediately stir in the lemon juice and zest. Season with salt and freshly cracked black pepper to taste.
  7. Serve hot, garnished with chopped parsley and a drizzle of olive oil if desired.

Notes

Add lemon juice at the end to preserve brightness. Avoid overcooking orzo to prevent mushiness. Rinse and drain beans well to avoid watery broth. For gluten-free, substitute orzo with gluten-free orzo, quinoa, or rice. Add shredded chicken or feta for extra protein. Reheat with added broth or water if soup thickens.
