  • 1/4 cup (45g) dark chocolate chips (at least 70% cocoa)
  • 1/4 cup (30g) vanilla protein powder (plant-based or whey)
  • 1 cup (90g) rolled oats, old-fashioned and uncooked
  • 1 tablespoon (12g) chia seeds
  • 3 tablespoons (60ml) honey or maple syrup
  • 2 tablespoons (15g) unsweetened cocoa powder
  • 1 tablespoon (10g) ground flaxseed (optional)
  • 1 teaspoon pure vanilla extract
  • Pinch of sea salt
  • 12 tablespoons (15-30ml) water or unsweetened almond milk (optional, to bind)

Instructions

  1. If almond butter is thick or separated, stir well or pulse briefly in a food processor until creamy (about 5 minutes).
  2. In a medium bowl, combine rolled oats, vanilla protein powder, unsweetened cocoa powder, ground flaxseed (if using), and chia seeds. Stir until evenly mixed (about 3 minutes).
  3. Add almond butter, honey or maple syrup, and vanilla extract to the dry mix. Stir with a spatula until the mixture starts to come together. Add water or almond milk one tablespoon at a time if mixture feels dry, until it holds but isn’t sticky (about 4 minutes).
  4. Gently fold in dark chocolate chips, distributing evenly without melting (about 1 minute).
  5. Scoop about 1.5 tablespoons (22g) of mixture and roll between palms to form compact balls. Place on a parchment-lined baking sheet or plate. Yield about 12-15 balls (about 5 minutes).
  6. Refrigerate the protein balls for at least 30 minutes to firm up. Alternatively, freeze for 15 minutes for quicker setting.
  7. Just before serving, sprinkle a tiny pinch of flaky sea salt on each ball to enhance flavor (optional).

Notes

Use room temperature almond butter for easier mixing. Adjust moisture by adding more almond butter or honey if too dry, or more oats if too wet. Chilling is essential to firm up the balls and improve texture. Variations include nut-free versions using sunflower seed butter and gluten-free oats, adding dried fruit or spices, or baking for a firmer texture.
