  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 1 can (14.5 oz / 411 g) fire-roasted diced tomatoes
  • 1 can (8 oz / 227 g) tomato sauce
  • 1 cup (240 ml) low-sodium chicken broth
  • 1 can (15 oz / 425 g) kidney beans, drained and rinsed
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheddar cheese, sour cream or Greek yogurt, fresh cilantro, green onions, diced avocado, lime wedges

Instructions

  1. Prep your ingredients: Dice the onion and bell pepper, mince the garlic, drain and rinse the beans.
  2. Heat your pot: Place a large Dutch oven or heavy-bottomed pot over medium-high heat. Add 1 tablespoon of olive oil and let it shimmer.
  3. Brown the turkey: Add the ground turkey to the hot pot. Break it up with a wooden spoon and let it cook undisturbed for about 2 minutes to get a good sear. Then break it into smaller pieces. Season with a pinch of salt and pepper. Once fully cooked (no pink remaining), use a slotted spoon to transfer the turkey to a plate and set aside. Leave a little rendered fat in the pot.
  4. Sauté the aromatics: Reduce heat to medium. Add the diced onion and cook for about 3 minutes until translucent. Add the minced garlic and diced bell pepper, and cook for another 1-2 minutes until fragrant.
  5. Bloom the spices: Add the chili powder, cumin, smoked paprika, dried oregano, and cayenne (if using). Stir constantly for 30-60 seconds until fragrant.
  6. Add the liquids and tomatoes: Pour in the fire-roasted diced tomatoes and tomato sauce. Scrape up any browned bits from the bottom of the pot. Stir to combine.
  7. Return the turkey and add the beans: Add the cooked ground turkey back into the pot along with the drained and rinsed kidney beans and black beans. Stir to combine.
  8. Add the broth and simmer: Pour in the chicken broth and stir. Bring to a gentle boil, then reduce heat to low-medium for a steady simmer. Cook uncovered for 15-20 minutes, stirring occasionally. The chili will thicken as it cooks.
  9. Taste and adjust: After simmering, taste and add salt and pepper as needed. Adjust spice level if desired.
  10. Rest and serve: Remove from heat and let rest for 5 minutes. Ladle into bowls and top with your favorite garnishes.

Notes

Don’t rush the browning step; it adds depth. Toast spices for 30-60 seconds to release oils. Start with less salt and adjust at the end. Chili tastes even better the next day. For a thicker chili, simmer longer or mash some beans against the pot. For a slow cooker version, brown turkey and sauté aromatics on stove, then transfer to slow cooker and cook on low for 4-6 hours or high for 2-3 hours.
