Refreshing and naturally sweet watermelon popsicles made with fresh lime juice and mint leaves. A quick, easy, and guilt-free summer treat with no added sugar.

Ingredients

Scale
  • 4 cups (600g) fresh seedless watermelon chunks
  • 2 tablespoons (30ml) fresh lime juice
  • 810 fresh mint leaves, lightly torn or chopped
  • Optional: 1–2 teaspoons honey or agave nectar
  • Optional: 1/4 cup (60ml) filtered water

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into chunks and remove any seeds.
  2. Add watermelon chunks, 2 tablespoons lime juice, and torn mint leaves to a blender or food processor. Blend until smooth, about 1 minute.
  3. If desired, add 1/4 cup filtered water and pulse a few more times for a lighter texture.
  4. Taste the mixture and add 1–2 teaspoons honey or agave nectar if needed, then blend briefly again.
  5. Pour the mixture into popsicle molds, leaving a small space at the top for expansion.
  6. Insert sticks or lids into the molds and freeze for at least 4–6 hours, ideally overnight.
  7. To unmold, run molds under warm water for a few seconds, then gently pull out the popsicles and serve.

Notes

Use ripe, sweet watermelon for best flavor. Tear mint leaves instead of chopping to avoid bitterness. Freeze overnight for best texture. If mixture is too runny, pre-freeze before inserting sticks. Popsicles keep well up to 2 weeks in the freezer.
