  • 1 tablespoon plain Greek yogurt or sour cream (optional)

  • 4 whole wheat or brioche burger buns, toasted
  • Leafy lettuce or arugula

Instructions

  1. Finely chop the red onion and fresh parsley or cilantro. Mince the garlic cloves.
  2. In a large mixing bowl, combine ground turkey, chopped onion, garlic, parsley, smoked paprika, cumin, salt, pepper, beaten egg, and breadcrumbs.
  3. Gently mix the ingredients until just combined, avoiding overmixing to keep patties tender.
  4. Divide the mixture into four equal parts and shape each into a round patty about 3/4 inch thick. Press a slight indentation in the center of each patty with your thumb.
  5. In a small bowl, mash the ripe avocado with a fork. Add lime juice and Greek yogurt if using. Season with salt and pepper and mix until creamy with some texture remaining. Cover and refrigerate until serving.
  6. Preheat grill or grill pan to medium heat (about 350°F). Brush grates or pan with oil to prevent sticking.
  7. Grill patties for about 6-7 minutes per side without pressing down, until grill marks form and internal temperature reaches 165°F.
  8. Toast burger buns cut-side down on the grill for 2-3 minutes until golden and slightly crisp.
  9. Assemble burgers by placing grilled patties on buns, spooning creamy avocado topping over each, and adding lettuce and tomato slices if desired. Serve immediately.

Notes

Do not overmix the turkey mixture to keep patties tender. Press a thumb indentation in patties to prevent puffing. Use a meat thermometer to ensure internal temperature reaches 165°F.
